Beautiful Amaranth makes a nice filler in your flower vases. This beautiful specialty plant has been around anywhere from 6000-8000 years ago! Prior to it flowering, many cook the leaves or eat raw such as adding to salads, soups, or even choose to sauté with oil (similar to spinach). I have read the leaves are nutritionally similar to beets, swiss chard, and spinach. As with most leafy plants, younger leaves are said to be milder and more tender while older leaves can be somewhat bitter. 3 sprigs per small bunch.
